SMS Innovation team arranged a special lecture to ABAC Student, educating value adding to tapioca through innovation
January 18th, 2023, SMS food innovation team visited ABAC students and gave a lecture on ‘General Starch & Modified Starch for Bakery Application’. Staring with tapioca itself as an economic crop of Thailand, and its production is widely used in various industries.
Generally, modified starches are commonly used in bakery applications including bread, rolls, cookies, pies, pastries, and baked goods. The outstanding of modified starch in bakery products is to provide a desirable texture, enhance moisture retention, prolong shelf-life, and enable excellent freeze-thaw stability. Besides, modified starches are specially developed to deliver alternative solutions such as gluten-free, egg-free, fat-free, dairy-free, clean-label, and plant-based.
SMS food specialists highlighted the starch modification through innovation and technology, as well as its versatility in use to expand products line in bakery applications which are being needed in the market.
The student participated by exchanging their opinions and experienced the bakery workshop in the lecture. SMS was glad to have been invited to educate the young generation and demonstrated the practical use of Thailand’s economic crop ‘tapioca’ to be versatilely applied in various food applications, exporting to a global market.
